Vegan Irish Soda Bread ~ I didn’t use the salt and threw in a handful each of golden raisins and dried cranberries. I’d used a mixer instead of doing it by hand. Maybe I’ll also use the salt? Either way, it’s okay, but best when served warm with a little Earth Balance vegan “butter” spread. Put a little bit of the butter on top of a slice and nuke it to revive the bread. I also found a little cinnamon adds a nice kick. I may also try this version sometime. Maybe this one.
Vegan Brownies ~ Pretty darn good. Now if only I could bake them in a normal oven.
